October is easily a Top 3 Month. Every major sport, and most of the minor ones, are in season. The weather shifts to human scale. The environment makes a lovely transition. The modern Holiday Season, that stretches through the Super Bowl, officially begins at the State Fair of Texas. Then, at the end of October, we get free candy.
The State Fair of Texas is particularly important. First, Texas plays Oklahoma on Saturday in the old Cotton Bowl. Almost as important, The State Fair of Texas is also the official launch for all of America’s best new foods for the coming year!
So, welcome to the Grover Picks Annual Food and Football Picks Post! Read on and learn about the newest concoctions at the fair and how they relate to your favorite team. As a bonus this year, The Commissioner has gathered extensive research from a single internet article from Tasting Table. Now he can include the great food inventions NFL teams contribute to our culture, too! If you are not a lucky person, you are today. If you are a lucky person, your streak continues! You are welcome.
This research is about food for fans, not media. HEGEMONY OF BIG FOOD
It’s OK to celebrate food, but never forget that we are all scammed at stadiums. The stadiums, except maybe for the Atlanta Falcons, hire giant food service companies to manage concessions. This is a monopoly situation. Branded foods – Chick Fil A or a local barbecue place – are there in brand only. Some other group is managing the food. Then, these Giant Food Companies hire ‘Volunteer’ groups – usually schools groups or other youth organizations – to work the concessions. The Groups get money for ‘volunteering’. Oh, that sounds nice, until you realize the Giant Food Company is paying about $2 an hour for labor and charging $20 for garbage food you have to eat on your lap from a paper box. The ‘Volunteers’ are committing to an 8 hour workday, plus travel. The math only favors the Giant Food Company. If we are over-paying for the food, they should at least hire real employees and pay them as such.
Fight the Power. That’s all I’m saying.
THE STATE FAIR OF TEXAS
This is the reason we are here and it’s not their first rodeo. It’s big, rowdy, and mostly unhinged. Plus, there is a classic college football game in a classic old stadium right in the middle of it all. Fully awesome.

TWINKLE TWINKLE BRISKET STAR*

Texas leads 65-51-5. Oklahoma is the nominal home team. The august and very normal Oklahoma state legislature took time in 1988 to declare the following menu as the official Oklahoma State Meal: chicken-fried steak, fried okra, barbecue pork, biscuits and gravy, grits and pecan pie.
Food-wise, for any American, the combination of Oklahoma and Texas cuisine is the most universally accepted version of ‘Delicious’ our great nation knows.
Football-wise, Sooner’s QB John Mateer is the definition of a hollowed out Twinkie. His counterpart, the Manning, is all drizzle.
PROFESSIONAL FOOTBALL
MIXED FRUITS TANGULU

America’s Team, the Dallas Cowboys, are, definitionally, sugar-coated sugar fruit on a stick. On the other side, there is no sugar-coating the Buccaneers. That’s a non-playoff team.

Philadelphia Eagles @ Jacksonville Jaguars (Sun 9:00 AM ET) Tottenham Hotspur Stadium, London, England
The Tush Push Tater is nearly perfect, both gastronomically and branding-wise. Like many stadium dishes, this is just a play on the classic nacho concoction, but the potato elevates the experience. The taters look like tushes. The green-dyed chicken is too spot-on. Is the point that an eagle tastes like chicken? That’s problematic. The Commissioner is not from Philadelphia, so he is wise enough to understand intuitively that anything called “Philly’s signature 215 special sauce” has a 73% chance of being fatally toxic, just for kicks.
Otherwise, it’s perfect.
The Eagles offense is not perfect. The Jags, London’s official NFL team, could very well shove all these taters right up the Eagles tush.

Two teams, 8 total games, no wins.
I’m not making a joke about hoe cake, you are.
MIAMI DOG
This combines a classic hot dog and a Cuban sandwich, layering ham, Swiss cheese, pickles, and mustard, zig-zagged with the stadium’s signature Cuban-style sauce. It is one foot long. Get yours at Joe Robbie Stadium, or whatever they call Joe Robbie Stadium these days.

Cincinnati Bengals @ Miami Dolphins (Sun 1:00 PM ET)
There is a question about the proper way to make a Cuban sandwich in Florida. It usually centers on the inclusion or exclusion of salami, the shape and texture of the bread, and when and how you arrived in the United States from Cuba.
Similarly, the Bengals and Dolphins disagree on the best way to build and NFL roster. Cincinnati chose players who are always hurt and cannot tackle. Miami chose cheap, practice-squad all-stars who cannot tackle.
Which is better? Who knows, however, here is some advice. You can get a Cuban style sandwich at Publix. It’s fine, as long as you do this in a Florida Publix. If you order a Publix Cuban sandwich outside of Florida, it’s 100% guaranteed the staff has no idea how to make it properly or even wrong. You’d be better off with the hot dog.
RETURN TO THE HORSE COLLAR
The Return to the Horse Collar features a Johnsonville kielbasa sausage covered in beer cheese sauce, beer mustard, and sauerkraut, stuffed inside a massive horseshoe-shaped Kaiser bun. It looks a little like Lambeau Field. Get yours at Curly Fries Lambeau Field.

Chicago Bears @ Green Bay Packers (Sun 1:00 PM ET)
Green Bay leads the NFL’s oldest rivalry 109-98-6. While the Bears have been busy winning three games with three different quarterbacks, the Packers have been busy building stadiums out of pretzels and eating cheese. There should be more pretzel-based foods that look like stadiums. Wisconsin limburger stinks less than the Packers offense.
CRABBED STUFFED PRETZEL

Jameis Winston wants one of the crab stuffed pretzels so bad, he will likely forget to pay for it. The Commanders have never been the same since they started serving lemon tarragon crab dip. Proper Hogs would never indulge or tolerate such fru-fru nonsense.

HOT DOG FLIGHT
The Hot Dog Flight features three slider-sized dogs: The brisket dog comes with smoked brisket, fried onions, pickles, bourbon BBQ sauce, and gouda cheese. The Buffalo Blitz dog has Buffalo chicken dip, celery, blue cheese crumbles, and Buffalo sauce. The Italian Stallion is covered in spaghetti, chopped meatballs, marinara, Parmesan cheese, and fresh basil. Get yours at Huntington Bank Field at Lake Erie in Cleveland, OH.

Cleveland Browns @ New York Jets (Sun 1:00 PM ET)
I can see why this hot dog flight makes sense to the the editors at Tasting Table, but in football terms, has anyone from Cleveland, a real and actual Cleveland, ever wanted anything in a ‘flight’? NO! Until the Browns revert to one triple sized hot dog with mustard, instead of these fancy flights, they won’t win another, or any, Super Bowl.
The Jets ran 32 offensive plays last week. The Bears accumulated 34 first downs against the Jets. The Jets are the quarter-cup-of-broth and a-slice-of-moldy-bread-prisoner-of-war-dinner of football.
FETTUCCINE NUTELLA CREPE
This Fettuccine Nutella Crepe slices the crepes into ribbons, drizzles them with Nutella, and tops them with fresh seasonal fruits and whipped cream. Get yours at the Texas State Fair.

Las Vegas Raiders @ New England Patriots (Sun 1:00 PM ET)
I’m suggesting that all three white-bread quarterbacks in this game, Drake Maye, Kirk Cousins, and Fernando Mendoza, could all find something nice to say about this unnecessarily weird dish, even though none of them knows what a crepe is. Also, if this was at an all-you-can-eat Vegas buffet, you still wouldn’t eat it.
PORK AND ALLIGATOR BURGER
The pork and alligator burger uses a mixture of the two meats on a toasted square-shaped cornbread bun, next to collard greens and spicy Cajun ranch. Get yours at the Caesars Salad Superdome.

Minnesota Vikings @ New Orleans Saints (Sun 1:00 PM ET)
That’s an unfortunate use of gator.
Fittingly, both Kyler Murray and Tyler Shough are sporting a square-shaped cornbread man-bun hairdos this week.

Fry bread is the best. You can never go wrong with fry bread. Think of the most deficient food you ever ate. Now consider wrapping that in fry bread. BOOM! It’s better! Fry bread can cover up almost any gastronomical mistake.
Unlike the Lions secondary, which couldn’t cover up a baby with a circus tent.
Even Cris Collinsworth, who loves everybody and everything, especially fry bread, said on national and streaming television that the Lions can’t play zone very well, but they suck at man coverage, too. Imagine if he was trying to be critical.
JERK SALMON NACHOS
Jerk salmon nachos are topped with locally-sourced smoked salmon that’s seasoned with a house-made juniper-jerk spice blend, and layered with pickled jalapeños, Fresno peppers, and melty cheese sauce. Two good teams, one great stadium menu item. It’s on brand with a tie to a player and a locally sourced ingredient that makes sense, salmon.
The Niners have 23 players they are paying to play professional football currently unable to play professional football due to injuries directly related to the location of their practice facility next to an electrical substation.
A little known health benefit for the Forty Niners. If you place 3 tablespoons of hand-picked jerk spice and 1 tablespoon of fish oil, and two squirts of WD-40 in a mortar and pestle, mix for 2 minutes at room temperature, then hand-rub that paste onto your hamstrings, quads, and arms, you can prevent sprained ankles and you will also be pre-seasoned for the barbecue later.
RACK-O-RIB VOLCANO

Ribs shaped like a volcano? Is this what we do with the McRib parts when McRib is out of season?

MINI SMOKED TURKEY LEG

Carolina Panthers vs Bye Week
Sure, the Panthers have the weekend off, but if you think The Commissioner, who lives in Charlotte, is missing the chance to make a short quarterback joke with Mini Smoked Turkey Legs then you must be new here.
Bryce Young is the flavor that packs a punch, with the same spices as your holiday quality quarterbacks, but in a smaller, more tender package.
BARBECUE
Here are a few uncontroversial and 100% factual truths about barbecue, according to The Commissioner.
Barbecue is a cooking method. Barbecue needs proper timing, smoke from wood with varying flavors, and seasoning (even sauce!) from whoever is cooking the barbecue.
Sauce is tasty, but… for barbecue, consumer added sauce is an apology, a cover-up, for messed up, improperly smoked meats.
You can pick your own favorite barbecue joints, cuts of meat, styles, or anything else, BUT, if you come in here leading with ‘Great Sauce’ you will be dismissed as an non-knower of ‘cue.
It’s OK to like sauces. The Commissioner loves barbecue sauce. However, if the sauce is your favorite part, just get some pasta and pour it on that. Use the sauce on anything you like, even grilled and smoked meats, but don’t claim the barbecue is good because you like the sauce.
It’s OK to put sauce on your barbecue IF you are the chef and that sauce is part of how you season the meat before serving. The sauce is only an issue if the consumer has to add it to ‘fix’ the barbecue. If whoever made your barbecue says, “You don’t need sauce, I already did that,” then you are in the right hands.
What if the smoked meats are presented fully cooked, but intentionally plain so the consumer is required to add sauce to create their own unique and custom meal?
Maybe. That’s the unfinished furniture approach to it. The Commissioner does not consider that ‘good’ barbecue since the creator of the meal did not complete it. However, The Commissioner will eat that all day, any day, because it is still smoked meats.
Corollary- If you are insisting on sauce before you eat your barbecue, you should just go get Thai food.
Barbe-Truth
Here are The Commissioners Favorite Barbecue Spots, in no particular order. It is OK and Highly Recommended that your list vary.

Where to consistently find the best local barbecue:
Not in North Carolina– In the Tar Heel state, “Barbecue” means chopped pork only and consumer added sauce is expected and essential. This stuff tastes fine, but there is a fundamental misunderstanding of barbecue as a cooking method, not a specific meat. Also, the argument about mustard sauces and red sauces is… tiresome and uninteresting to anyone whose great-grandparents didn’t grow up in the Carolinas.
Not in Memphis- Good things leave Memphis, they are not IN Memphis. Memphis is the New York Jets of places. That said, dry rubbed ribs in Memphis is not a bad meal at all.
Not in Asia- Although very tasty, we are talking about American barbecue. This is no time for international diversity, no matter how well it’s done.
Definitely in Texas and Oklahoma – This is based on style, if not location. You can get good Texas style barbecue outside of Texas, but it’s better in Texas the way a Guinness tastes better in Dublin. The trick is smoke, wood choice, seasoning, ability to barbecue multiple cuts of meats and attitude.
Definitely in Kansas City (Missouri or Kansas) – If you are arguing about which is the best barbecue place in Kansas City, then you are having a great day. The only way to answer that question is to try them all, preferable over a single 24 hour food quest.
PROFESSIONAL AMATEUR FOOTBALL

THE NIECE

Texas A&M Aggies @ Missouri Tigers (Sat 12:00 PM ET)
You can’t have BRUNCH without french toast. Add in grilled cheese, sugar and bourbon and you are ready for a noon kickoff. I almost used the 3D Fruit Ice Cream here because one of the coaches looks a little like a mango, but that would be mean and I would apologize, and I didn’t feel like apologizing today.
Footlong Ribwich
Nebraska’s creation includes maple barbecue boneless riblets, onions and dill pickles on a Rotella hoagie roll. Get yours at Memorial Stadium in Lincoln, NE.

Indiana Hoosiers @ Nebraska Cornhuskers (Sat 12:00 PM ET)
As mentioned in this blog before, Nebraska is a hotbed of food scientists. They make their own cheeses and ice cream on campus. They have special labs to research and develop new foods. The Footlong Ribwich started out as a 6-inch fish sandwich, then a grad student discovered that Lincoln is hundreds of miles from the nearest grouper and thousands from fresh tilapia. So the lab pivoted to pork. They are scientists after all.
Why the footlong? Watch the game closely, specifically the chain gang. The chain is actually 30 foot-long Ribwichs, linked by twine woven from corn husks, naturally!
Indiana, the reigning National Champions of Football, is the house salad of states, universities, and football.

There’s a vegetable in there, so it may be slightly healthy, buuuuuut we’ve doused it in the rich sugar of SEC money, so it’s also trying to be a little ‘dangerous’. In the end, nobody wants this.
LOVE ME JAM SANDWICH*
The Love Me Jam Sandwich is a “bold Southern-style sandwich” stacked on buttery, grilled Texas toast with melty peanut butter, homemade banana jam, thick-cut bacon, and a crunchy layer of crushed potato chips. Dreamland barbecue is an abomination. White barbecue sauce, which is mayonnaise-based, is the worst kind of apology sauce. That stupid new documentary about anti-capitalist Nick Saban is gross. I assume. I haven’t seen it, but why should that matter?
There’s a big storm a-brewin’ in the Gulf that could become a hurricane that would overrun the entire state of Alabama and interfere with the game.
Recent research by leading insurance firms discovered that instead of sandbags, you should protect your property with large stacks of foot-long fries. They absorb the water, which you can later boil out and then reconfigure your starches into a new Alabama National Championship trophy.

A blogger online, on the internet, recently described Vols future National Champion Coach and former Heisman Trophy winner Josh Heupel as a, “Bread ball stuffed with ranch sauce.”
The blogger did not apologize for the unnecessarily mean comment.
Instead, the blogger got up, went to his fridge, pulled out a bottle of barbecue sauce and poured it over a mixed leaf salad and told himself he was having barbecue for lunch.
